Generally I am in favor of ceramic cookware, but in this case I can't really say, since the company doesn't disclose everything about their product. It says the coating is stable up to 400F, which isn't very high, making me wonder how the ceramic coating is adhered to the pan. I am also curious about durability, and sensitivity to hot/cold temperature changes. FWIW, I review cookware in my new book, Food As Medicine...

I agree, Todd. There are many other chemicals and toxins out there that we need to be careful with.
What are your thoughts on Eco-Pans (I believe Paderno makes a line of pans that use ceramic coating instead of teflon)?

As far as all my research goes,, your healthiest oil is going to be (organic of course) coconut oil, then olive oil. But olive oil is not good for heating, only good if you're using it at room temperature (or slightly cooler) because it starts to deteriorate quickly even at slightly above room temp.

If I need other fat, then I'll use unsalted organic butter.

Hi Cornelia,
The knee is great! I mentioned above that I believe the ACL is fully healed.
Unfortunately I have not had as much time to designate towards strengthening and repairing the meniscus, so I still have a bit of work to do there. I have a baby on the way, so life is pretty hectic :)

However, I am back playing some sports (volleyball, floor hockey, etc) and I plan to play soccer in the spring/summer.

I hate how so many food processes are going this way. I believe it's dangerous and something to stay away from.

"There’s no need to re-invent the wheel here. " It's funny how even with millions of dollars (maybe even billions of dollars) of research, we still have not been able to come up with safe "man-made" alternative sweeteners. You have this expert and that celebrity touting the benefits of this and that miracle food or additive. When you are not an expert nutritionist, it is hard to know who to pay attention to. You are probably right though, it is hard to go wrong if you take steps to minimize the amount of processed foods you eat.
